Garlic Parmesan Crackers

Today I made some gluten-free garlic parmesan crackers. I have been wanting to make these for a while now, and I finally had the chance! My cheesy spice crackers are made with butter, but I wanted to do something a bit different this time. I figure that garlic and Parmesan cheese go better with olive oil than butter, so I used Erin's recipe for rosemary and olive oil crackers as inspiration. Basically I combined the two recipes, and did a bit more tweaking than I expected to do. The end result? Crispy, cheesy crackers with a nice Italian flavor. Yay!

Cheese + Crackers = Awesome


Yesterday I bought a new cookbook: You Won't Believe It's Gluten-Free!. Yes, it's a cheesy title, but there are 500 recipes inside! What I love about this book is that it gives you options. A lot of its recipes include variations for rice-based, corn-based, potato-based, and (gluten free) oat-based flours, depending on your preferences. High five!

Inside the book, I saw a recipe for rice-based cheese crackers, and I just had to try them. The recipe is very easy, and I spiced it up with some paprika, garlic, and Italian seasoning. The dough is very easy to work with, and I used my mini autumn leaf cookie cutters to shape the crackers. It made about 5 dozen. They are crispy, full of flavor, and so cute! It is going to be very hard not to eat them all tonight. :P
